Pengaruh Lama Penyimpanan Telur di Suhu Refrigerator yang Berasal dari Pasar Tradisional terhadap Indeks Putih Telur, Indeks Kuning Telur, dan Volume Isi Telur
This research was carried out in the Integrated Laboratory of the Faculty
of Animal Husbandry, PGRI Kanjuruhan University, Malang. On April 04, 2023 -
June 10, 2023. This study aims to find out and study the quality of egg white
index, yolk index, and chicken egg content volume from traditional markets at
storage time at refrigerator temperature. This research material uses 100 chicken
eggs from traditional markets. The method used in this study is to conduct
experiments in the laboratory. The design used was a Complete Random Design
(RAL) with 5 treatments, namely storage for (P1: 0 days, P2: 7 days, P3: 14 days,
P4: 21 days, and P5: 28 days) with 4 repetitions in each treatment. Each treatment
uses 20 eggs so that the number of eggs used is 100 eggs. The variables observed
in this study were egg white index, yolk index, and egg content volume. The data
obtained in this study was analyzed by multiple fingerprint analysis (ANOVA) if
there was a difference between the treatments, then the BNT test was
continued.Based on the results of the study, it was shown that the effect of the
long storage time of eggs at refrigerator temperature from the traditional market
on the egg white index, yolk index and egg content volume had an unreal effect (P
> 0.05) on the egg white index, yolk index, and egg content volume. Based on the
results of the study, the average egg white index (0.33%), the average egg yolk
index (0.19%), and the average volume of egg content (56.09%).The conclusion
of the results of the study is that based on the discussion, it can be concluded that
the egg storage time of up to 28 days at refrigerator temperature still meets the
quality standards of egg white index, egg yolk index and egg content volume of
purebred chickens from the traditional market. Based on the conclusion, it is
recommended that there be further research related to the storage time at
refrigerator temperature on the external quality of eggs such as egg white index,
yolk index, and egg volume and weight for 28 days. Further research is needed
related to the length of storage at refrigerator temperature on the internal quality
of eggs such as egg white index, yolk index, and egg volume for 28 days.
